Schuss is a famous cake by chef Gaston Lenôtre, the founder of Ecole Lenotre— where Marc Heu studied to become a pastry chef.

This luxurious summer version starts on a sweet vanilla tart dough base, which is topped with raspberry confit, ladyfinger biscuit soaked in kirsch syrup, a generous amount of cream cheese mousse, and a final layer of soaked ladyfinger biscuit. The entire cake is covered in a luscious mascarpone vanilla whip and sprinkled with crunchy caramelized hazelnuts. For the final touch, a beautiful bed of fresh raspberries is laid on top.
