The Guava & Raspberry Pavlova is a beautiful reimagining of this classic French cake, “pavlova.” Chef Marc’s creation features a soft and airy meringue that has been baked to perfection before a generous layer of guava diplomate cream is piped in a ring of dollops. A tangy raspberry confit is then filled in the center before fresh raspberries, red sorrel leaves and fresh violas adorn this tropical cake.
