Chocolate Saint Honoré features hundreds of flaky, thin layers of chocolate pate feuilletée, underneath a crown of pate a choux, filled with a soft dark chocolate crémeux, glazed with a thin layer of chocolate. The top layer features rows upon rows of dark chocolate crémeux and chocolate milk whipped cream piped like a beautiful flower, and the centerpiece, a proud choux with 24K gold leaf.
