Marc Heu Pâtisserie introduces his newest creation “NUAGE.”
“Nuage,” or “Cloud” is a yule log resting on a bed of ganache montee vanille piped to look like pebbles. The log of this beautiful cake is made with puff pastry, and filled with a layer of blood-orange confit, a layer of lady finger bisquit soaked in blood orange syrup and a layer of blood orange creameux, before bergamot ganache is beautifully piped like clouds. This cake is then garnished with a light dusting of gold, sugared pearls and finished with cream puffs filled with bergamot and mint, coated in white chocolate and 24K gold leaf.
