This heart-shaped tart features an array of citrus flavors (‘agrumes’ meaning ‘citrus fruits’ in French). TARTE AUX AGRUMES begins with a sweet tart dough, which is followed by a layer of lime and olive oil confit, blood orange crémeux, and white chocolate. Finally, yuzu whipped ganache is beautifully piped on top around a lime confit heart. The top is then garnished with gold leaf and vibrant micro greens.
