MAMAN JE T’AIME

To honor spending Mother’s Day with his mom for the first time in 20 years, Chef Marc Heu has made a very special cake as his May special! MAMAN JE T’AIME (“I love you Mom”) integrates her favorite flavor combination—the tropical guava fruit and summery strawberries.

For the middle of this cake, Marc has mixed both strawberries roasted in honey and olive oil and fresh strawberries for a lovely texture. Sandwiching the strawberries are two layers of biscuit madeleine, made of a gluten-free almond flour. The outside of the cake is coated in a creamy vanilla lemon ganache and decorated with vibrant, fresh micro flowers and more fresh strawberries.
